WINES

2013 Sauvignon Blanc
This wine opens with evocative and complex aromas of guava, exotic tropical fruit and cut flowers, with a zesty lime undertone. The palate of savory flavors of white pepper, wild fennel root and asparagus round out the lively, welcoming approach. Lean on the palate, with lemon curd on the mid, and a tart finish, this Sauvignon Blanc shows good acidity and would pair well with seafood or an herbed lamb dish. Young and crisp, drink it now through 2016.

2013 RosÉ
This rosé has a delightful nose of rhubarb, strawberry and kiwi fruit with a cardamom and coriander undertone. On the palate, light cherry and dried cherry come first, with melon and pomegranate following, for a long, dry finish. Pair with salmon or other rich fish, robust poultry, or enjoy alone on a warm afternoon. A beautiful pink-salmon hue, drink now through 2015.

2012 PAPILLON de NUIT Syrah
This Syrah is reminiscent of an old-world northern Rhone Syrah. Striking aromas of duxelles, cured meat and salumi spiced with white and black pepper, cloves, and a worn leather/cured tobacco tone vie for attention throughout. Dark and brooding, this Syrah exudes tart boysenberry, dried blueberry, and bramble. Hints of dark chocolate and espresso beans on the palate are followed by a savory finish. This wine would pair well with roasted mushrooms, red and cured meats, wild game and well aged cheeses. Decant in its youth, as this wine is taut when opened. This Syrah will cellar well for 10-15 years or longer considering the acid profile.
